Live performance guitar tone

Hi,
My idea is to plug my guitar into the Apogee Jam and use Garage Band on my iPhone 3Gs, then out the headphone jack into a PA. I know I won't be able to change tones on the fly but is this feasible or will there be latency issues?

I'm just testing out the Jam on an iPad 1, iPhone 4 and MBP. Will let you know in a couple of days...

Haven't found any latency issues using Jam, GarageBand for iPhone 4 or on an iPad 1...

Really nice bit of kit. Small, light and Apogee quality!
