Hi Jeff,
I'm not near my iPhone right now... but I think this should help:
Open iPhoto and from the iPhoto > Preferences [General] tab
make sure that "Connecting Camera opens: No Application" is selected.
Try restarting now with your iPhone connected and iPhoto shouldn't launch.
